12 oz. box of rainbow spirals, cooked and drained
1 seedless cucumber, chopped
1/2 of a red onion, quartered and thinly sliced
1/2 of a red bell pepper, chopped
1 C. sliced grape tomatoes
4.25 oz. can chopped or sliced black olives, drained
1/3 C. freshly grated parmesan cheese
Combine all the ingredients in a bowl, pour the dressing over the salad and toss. Chill for 1 hour before serving (dressing below).
Dressing
1/2 C. olive oil
2 T. red wine vinegar
1/2 of a lemon, juiced
1 clove garlic, minced
1 tsp. dijan mustard
1 tsp. dried oregano
1 tsp. dried basil
1/4 tsp. each salt and pepper
Whisk together and serve over salad.
