Ingredients
6 oz. fresh or frozen sliced okra
1/2 C. onions that have been sliced then sliced again in half
1/4 C. all purpose flour
1/4 C. yellow cornmeal
1/4 tsp. cayenne pepper
1/8 tsp. each salt and pepper
1 large egg
1 T. milk
oil for frying
How To Make It:
If the okra is frozen, allow to partially thaw (it doesn't need to completely thaw). Place the okra and onions in a bowl and set aside. In a ziploc bag add the flour, cornmeal and seasonings. Shake to combine. In a bowl, whisk together the egg and milk. Heat a deep fryer or skillet with about 1/4" of oil in it to 350 degrees. Pour the egg mixture over the okra and onions and toss to coat well. In batches, put some of the okra/onions into the baggie and shake to coat. Carefully place in the hot oil and fry for a minute or two until golden brown. Drain on a paper towel lined plate. Repeat with remaining okra/onions.
