Harvest Time Salad



FOR THE SALAD:

1/2 cup chopped walnuts
1 bunch of spinach, torn into bite size pieces (or your favorite lettuce)
2 cup dried cranberries
2 large, fresh tomatoes chopped or diced
1 avocado (peel, remove pit, and dice)
1/2 yellow sweet pepper, thinly sliced
4 small radishes thinly sliced
1/2 red onion, thinly sliced
(Optional: Boiled egg smashed and mixed in or slices on top)
(Optional: Smoked Gouda cheese sliced or shredded)

FOR THE DRESSING:

3 tablespoons of Old Orchard Apple Juice
3 tablespoons red wine vinegar
2 tablespoons of raspberry jam with seeds (or more to taste)
1/3 cup olive oil
1/4 teaspoon garlic powder
freshly ground black pepper to taste
dash of salt (to taste)

DIRECTIONS:

Prepare all ingredients as directed and toss in a bowl.
Use a dressing shaker or blender and mix all ingredients thoroughly.
Serve the salad on a plate, drizzle with the dressing.
OPTIONAL: Serve with Croutons/Real Bacon Bits or bake up some fresh bread sticks
