Ingredients:
6 large carrots, peeled
1/4 c fresh lemon juice
2 cloves garlic, finely chopped
2 tsp ground cumin
1 tsp cayenne pepper
1 tsp salt
1/2 c olive oil
1/4 c finely chopped parsley
Directions:
Cook carrots until just done, about 10 minutes.
Drain carrots and cut into 1/2 inch thick slices.
Whisk together remaining ingredients.
Toss carrots in the mixture. Serve cold.
